Breakfast of champions step aside, because grain-free waffles are going to take the cake! These grain-free waffles are everything a waffle should be…. light, fluffy, flavorful, and easy to make! Not to mention they also make a superb snack option, amazing waffle sandwich, or can even be turned into a dessert. The topping options for these waffles are endless, and they are about as versatile as they come. I love everything about these waffles, from their allergy-friendly ingredients to their soft and fluffy texture! They are definitely a staple recipe in my homestead kitchen!

Modern Pioneer Recipe

These waffles make a great modern pioneer recipe. While I generally think of pancakes, or flap jacks, as being what the early pioneers may have enjoyed, I think these waffles can still be a pioneer recipe. They are simple, healthy, versatile, and delicious, everything a modern pioneer recipe should be!

Let’s start with how allergy-friendly these grain-free waffles are. I’ve already indicated that the recipe is free from any grains, hence the name, but these waffles are also:

  • gluten-free 
  • nut free
  • dairy-free
  • corn free
  • anti-inflammatory
  • sugar free

Despite being so allergy-friendly, these waffles do not lack the traditional waffle taste and texture. I was pleasantly surprised with how fluffy, light, and crispy these waffles turned out.

You can make them in a Belgian waffle iron like I did, or try them in a square waffle iron, a circle waffle iron, a specially shaped waffle iron, or a cast iron waffle pan. You can even try making this recipe over the fire, I would just recommend cooking them for a longer period of time than a traditional waffle. Any way you have them, these grain-free waffles are the best!

Grain-free Waffle Toppings Ideas

When it comes to waffle toppings, my preferences are pretty simple. I like to stick with good ol’ butter and pure maple syrup. However, with these grain-free waffles, I ventured out of my comfort zone and tried some new toppings. Bananas and blueberries are actually amazing waffle toppings! But maybe you already knew that.

I’ve found that I am a pretty big banana fan… I love banana bread, banana pancakes, banana in my oatmeal, and now banana with my waffles! For those of you who like to have a wide range of topping options, here are some other homestead toppings that are delicious on waffles:

Whatever toppings you choose to use, these waffles are guaranteed to be delicious! For me, maple syrup, dairy-free Cocowhip, and banana or blueberries are my new favorite waffle toppings!

How to Serve Waffles

Breakfast– Waffles for breakfast is a family favorite in my house, but for me, waffles can be so much more than just breakfast! Really, they make a great menu option for any meal of the day and can even be a snack or dessert. I enjoy eating fresh waffles, but leftover waffles are the bomb for sandwiches, snacking, and desserts!

Lunch– Seriously, if you haven’t tried a waffle ham sandwich or a waffle PB&J sandwich, then you are really missing out! These grain-free waffles make amazing sandwiches and you can put any sandwich filling you want between them!

Snack– As for snacking, they are delicious eaten just plain, but you can spruce them up a bite too. Honey is a favorite snack topping for me or slicing up a banana to top the waffles with makes a delicious snack as well. A honey and peanut butter waffle sandwich makes a delicious protein-rich snack!

Dessert– These waffles also make great desserts! Turn them into waffle ice cream sandwiches, dip them in melted chocolate, or add them to a banana split… the options are nearly endless! I have even seen a recipe for a waffle cake, which might be taking it a little too far, but it still sounds good! I have made a waffle gingerbread house before and that was pretty tasty to eat with the frosting, sprinkles, and chocolate gems I used to decorate it with.

Of course waffles can just be served by themselves, but if you want to make a hearty meal out of them, I have come up with a few variations that my family liked. Try making a bacon egg sandwich with these grain-free waffles or just serving them with a side of bacon and scrambled eggs. Waffle bars are always fun to put together and delicious to partake in too!

How to Store Grain-free Waffles

Storing grain-free waffles is super simple, which makes them great to have as leftovers, save for later, or use as a quick breakfast option. If you plan on eating them within the next 2-3 days after making them, they can just be stored in an airtight container at room temperature.

For longer storage, I suggest freezing them in an airtight container. These waffles freeze and unthaw wonderfully, which comes in handy for camping, traveling, or when I have need of a quick breakfast option. You can unthaw them slowly by leaving them at room temperature or putting them in the fridge to unthaw. You can also pop them in the toaster frozen, toast them on the highest setting, and enjoy them in minutes!

Grain-free Waffle Recipe Tips

These grain-free waffles are actually quite simple to make. Whipping them up for a breakfast doesn’t take long at all, and the dry ingredients can even be mixed together ahead of time. Here are a few recipe tips to make sure your waffles turn out perfect!

  • Whisking– Using a whisk or a fork to combine all of the ingredients helps make the batter smooth and incorporates all the ingredients sufficiently. 
  • Consistency– The batter should be thin enough that it doesn’t stick to the whisk but not too thin so that it seems watery. 
  • Too Thin– If the batter seems too thin, let it set for a few minutes to allow the cassava flour to thicken up the batter slightly so that you can easily pour and spread it into the waffle iron.
  • Too Thick– The batter may seem to thicken even more as it sets. Just add a splash or two of additional milk or water to thin it down so that it is pourable.
  • Cooking Tip– When you pour the batter into the waffle iron, use a spatula to spread the mixture evenly over the iron. 
  • Doneness Test- These waffles may take longer to cook than your average waffle, depending on your waffle iron. You can tell when they are done if they are crispy and browned on top.

Grain-free waffles make an excellent breakfast and I love using them to make sandwiches, have as a snack, or turn them into a dessert! Topping them with fresh fruit, whipped coconut cream, and pure maple syrup is my favorite way to enjoy these waffles, but you can enjoy them with whatever toppings you like best!

Grain-free Waffles (gluten-free & dairy-free)

Ingredients

  • 1 1/2 cups Otto's Naturals cassava flour
  • 2 1/4 tsp. Otto's Naturals baking powder
  • 1 tsp. sea salt
  • 2 large organic, pasture-raised eggs
  • 2 T. avocado oil
  • 1 3/4 cups coconut milk or oat milk beverage

Instructions

  • Plug in your waffle maker to get it pre-heating. If your waffle iron is not an anti-sticking kind, spray it with some coconut oil or avocado oil cooking spray.
  • In a large mixing bowl, combine the cassava flour, baking powder, and sea salt. Whisk to combine.
  • Add the eggs, avocado oil, and 1 1/2 cups of the milk. Whisk until the batter is smooth. If the batter seems too thick, add more milk as needed. You may also need to use additional milk to thin the batter as you are cooking batches of the waffles.
  • Pour the batter into your waffle maker and spread it in an even layer to fill your waffle maker.
  • Let the waffles cook for about 8 minutes. It may be longer depending on your waffle maker. The waffles should be golden brown and feel crispy to the touch. Continue making waffles until the batter is used up.
  • Serve with your favorite waffle toppings! Store leftovers in an airtight container at room temperature for 2-3 days or freeze them.
