Plug in your waffle maker to get it pre-heating. If your waffle iron is not an anti-sticking kind, spray it with some coconut oil or avocado oil cooking spray.
In a large mixing bowl, combine the cassava flour, baking powder, and sea salt. Whisk to combine.
Add the eggs, avocado oil, and 1 1/2 cups of the milk. Whisk until the batter is smooth. If the batter seems too thick, add more milk as needed. You may also need to use additional milk to thin the batter as you are cooking batches of the waffles.
Pour the batter into your waffle maker and spread it in an even layer to fill your waffle maker.
Let the waffles cook for about 8 minutes. It may be longer depending on your waffle maker. The waffles should be golden brown and feel crispy to the touch. Continue making waffles until the batter is used up.
Serve with your favorite waffle toppings! Store leftovers in an airtight container at room temperature for 2-3 days or freeze them.
