They pair great with dairy-free marshmallow fluff frosting and look fantastic decorated with the simple chocolate hearts! What could say “I love you” better than a delicious donut? If you know the answer to that let me know. Anyways, I think you are going to love these donuts, whether you enjoy them yourself, share them with friends, or make them for someone special. I am a cookie and pie type person, but a good old donut is what I need ever so often.

For me, donuts can be just about anything, dessert, breakfast, snack, side dish. They really are a versatile food! I love having them for snack, since they are delicious and filling. They also make a great breakfast, a special way to start your day! Dessert is another role they can fill since they are sweet, but not overwhelmingly sweet. Sometimes I’ll even serve them as a side to salad or soup. You never know when you’ll need a donut in my house!

Making Strawberry Donuts

I love how simple and easy these grain-free strawberry donuts are to make. The batter whips up quickly and the donuts don’t stick to the donut pan when you are trying to get them out! I like to use these Wilton non-stick donuts pans which can be found on Amazon. Each pan has 6 donut cavities and they are super easy to clean. Making the donut batter and filling the donut pans is simple, but here are a few tips to ensure your donuts come out fantastic!

Donut Tips

  • Batter Consistency- The consistency of your batter after you have added all of the ingredients should be moister than cookie batter and slightly drier than muffin batter. It should be too moist to handle with your hands but just dry enough that it is not soupy. If your batter is too dry, add a little bit more coconut milk. If your batter is too moist, let it set for a few minutes to allow the coconut flour to absorb some of the moisture. 
  • Filling the Donut Cavities- When filling the donut cavities, you want the batter to be level with the raised center piece of the donut cavity (the piece that makes the hole in a donut). Using a spoon, you will want to smooth the batter in each cavity so that it is even on top. 
  • Chilling the Donuts- After you have filled the donut cavities in the donut pans, you will place them in the fridge to chill for 20 minutes. This causes the donuts to bake unevenly, which is a good thing since that gives you the donut texture that you want. You could skip this step, and they would still turn out fine, just with a slightly different texture.
  • Oiling the Donut Cavities- I have found that the trick to keeping your donuts from sticking to the donut pan is to use coconut oil! Of all the oils, coconut oil seems to work the best for allowing the donuts to pop easily out of the cavities. I use my fingers to spread the coconut oil inside each donut cavity.

Making the Marshmallow Fluff

When coming up for a frosting for these donuts, I knew I wanted to stick to the Valentine’s Day theme I had going, and brown coconut sugar frosting just didn’t seem to fit the bill! So, I came up with the idea to use white marshmallow fluff for the frosting instead. It turned out perfect and went great with the donuts!

This marshmallow fluff recipe is super simple and easy to make! It uses only 5 simple ingredients. Marshmallow fluff frosting pairs great with the strawberry donuts but you can also try it on other baked goods! Keep in mind that you will want to frost the donuts right after you make the marshmallow fluff since the fluff will set up the longer it sits out. Marshmallow fluff that has set up is really hard to spread! 

To make sure your honey mixture reaches the right temperature you can use a candy thermometer or a meat thermometer. I use this Thermo deep fry thermometer any time I need to heat a mixture up to a certain temperature. It reads in both Fahrenheit and Celsius and can clip onto the edge of your pot too. When taking the temperature reading of the honey mixture, try not to let the thermometer tip rest on the bottom of the pan. That would give you a slightly hotter temperature output.

Decorating the Donuts

Decorating the donuts is the fun part! Again you will want to decorate them right after you frost them, before the marshmallow fluff sets up. I made these cute little chocolate peanut butter hearts to decorate my donuts with! Here is how you make them: 

  • Line a flat surface (like a plate) with waxed parchment paper. Place the lined plate in the freezer. 
  • Melt a 1/4 cup of Enjoy Life mini chocolate chips over low heat. Add 1 teaspoon of peanut butter to the chocolate chips while they are melting. 
  • Once the chocolate and peanut butter has melted, remove the chocolate from the heat and take the plate out of the freezer. Using a toothpick, get a glob of chocolate on the tip of the toothpick and create a small heart shape on the cold waxed parchment paper. Continue making hearts until you have as many as you want. 
  • Place the chocolate hearts back in the freezer so that they can set up. 
  • Once the chocolate has hardened, you can peel the hearts off of the waxed parchment paper and put them on the donuts!

Grain-free Strawberry Donuts with Marshmallow Fluff Frosting

Ingredients

Strawberry Donuts

  • 1/4 cup organic, grass-fed butter melted
  • 1/3 cup organic coconut sugar
  • 3 tblsp. pure maple syrup
  • 1 tsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • 2 organic, free-range eggs
  • pinch of salt
  • 1/2 cup cassava flour
  • 3/4 cup Bob’s Red Mill tapioca flour
  • 1/4 cup Nutiva coconut flour
  • 1/4 cup organic coconut milk
  • 3/4 cup organic frozen strawberries

Marshmallow Fluff Frosting

  • 1 1/2 tsp. Great Lakes unflavored gelatin
  • 1 1/2 tblsp. water
  • 1/4 cup pure honey
  • 1/2 tsp. pure vanilla extract
  • pinch of salt

Instructions

  • Lightly oil 9 donut pan holes with coconut oil. 
  • In a large mixing bowl, stir together the melted butter, coconut sugar, maple syrup, vanilla extract, and salt. Add the baking soda, cream of tartar, and eggs. Stir until all the ingredients are combined. 
  • Add the cassava flour, tapioca flour coconut flour, and coconut milk. Stir until combined. Chop the frozen strawberries and gently fold them into the batter. 
  • Spoon the dough into the donut pan holes. Fill each hole until the batter is level with the raised center of the hole. Gently smooth the batter in each hole. Chill in the refrigerator for 20 minutes.  
  • While the donuts are chilling, preheat the oven to 350 degrees F. After the donuts have chilled, bake them for 10-12 minutes. The donuts should spring back when you gently press them. Allow the donuts to set in the pans for 3 minutes, then remove the donuts to a cooling rack. 
  • While the donuts cool, make the marshmallow fluff frosting. In a medium mixing bowl, sprinkle the gelatin over the water. In a small saucepan, heat the honey, vanilla, and salt over medium heat, stirring periodically. 
  • Once the honey mixture has begun to simmer, continue to stir constantly until the mixture reaches a temperature of 240 degrees F. Then, slowly pour the honey mixture into the gelatin while beating at a medium speed with beaters. 
  • Continue to beat the mixture at a high speed for 4-5 minutes. The mixture should double in volume and become thick and sticky. Spread the marshmallow fluff frosting over the donuts. 
  • Decorate and enjoy!
