Not to mention eggs are a staple in our house and I am always trying to find new recipes to use them in. The Biscuits

For the biscuits in this recipe I decided to use Chebe all-purpose bread mix. I love Chebe because it is allergy friendly, low inflammation, and grain-free. Chebe uses tapioca flour as its main ingredient. However, the biscuits do not turn out stretchy or spongy, which can sometimes happen with recipes made from strictly tapioca flour.

Chebe biscuits are super easy to make. All you have to do is add butter or coconut oil, a couple eggs, and some water or coconut milk. The recipe is super flexible too. I have made it using just one egg or even no eggs! Just increase the water or milk to make up for the lack of eggs.

Not only do I love using Chebe biscuits for this egg casserole, but they work great for whenever I need a grain-free biscuit for any other meal or recipe! Chebe biscuits freeze well too. I have used these rolls for sandwiches, breakfasts, and soups.

I highly recommend giving Chebe biscuits a try, however, if you have another grain-free biscuit or roll recipe that you like to use, it can easily be substituted into this recipe. In fact, you could even use these grain-free cheese rolls or grain-free artisan rolls in this recipe!

The Eggs

Eggs, eggs, and more eggs! I love eggs, however, sometimes I get tired of having the same old egg recipes over and over again. This egg casserole was the perfect variety to add to my menu. Grain-free biscuit and egg casserole doesn’t just have to be a breakfast food either! It can easily make a fantastic dinner or be used as leftovers for lunch!

Back to the eggs. Eggs are a wonderful source of protein and contain all the life sustaining nutrients except for vitamin C (which, incidentally, chickens can produce on their own, so baby chicks don’t need it in the egg).

Eggs are an essential part of this casserole because what’s a breakfast casserole without eggs!? The biscuits and sausage gravy in this casserole pair perfectly with the eggs. The texture is amazing and the taste is even better! The fresh eggs laid by my backyard flock make this casserole the best that it can be! However, if you are not as fortunate to have your own fresh egg makers, I highly recommend you buy pasture-raised, organic eggs. Or, even better, find a local farmer or backyard chicken raiser in your area to buy eggs from!

Pasture-raised, organic eggs will have the best flavor and most nutrition when compared to other eggs.

The Sausage Gravy

Yes! This casserole contains gravy! But don’t worry, its a healthy kind of gravy. When making this recipe I wanted to combine the traditional pairing of biscuits and gravy with eggs to create a healthy, delicious breakfast. I have never had biscuits and gravy, so when I made this casserole, it was the closet thing I have had so far to a biscuits and gravy type meal.

The sausage gravy in this casserole provides some great moisture and amazing flavor. I used organic pork sausage that I buy from a local farm. You can use whatever ground meat you prefer. Pork has lots of flavor, so if you use a ground red meat you may want to add extra flavorings to the meat before mixing it into the gravy.

Making gravy is super simple and I used wholesome ingredients to make this gravy as healthy as I could. Homemade bone broth, tapioca flour, and organic sausage all work to make this gravy healthy and flavorful.

Recipe Tips

I find that casseroles are pretty simple to make, and this grain-free biscuit and egg casserole is no exception. The hardest part is probably making the grain-free biscuits. Which, really isn’t that hard at all since the mix comes out of a box! However, here are a few tips that you may find handy when making this casserole.

  • When making the gravy, make sure that you thoroughly whisk in the tapioca flour as you add it to ensure that no tapioca clumps form.
  • If you are not using a fatty sausage, you will need to melt some bacon fat to use in the gravy.
  • You can make up the gravy ahead of time and store it in the fridge until you are ready to make or assemble the casserole.
  • You can make this casserole in one big pan or you can make it into individual casseroles! Just follow the recipe and instead of making it into a 9×13 glass baking dish, assemble it into individual ramekins!
  • Let the casserole set for a few minutes after is has been baked before you cut it. Sometimes the eggs need a few minutes to set up even after they have been cooked.
  • This casserole can be assembled ahead of time and stored in the fridge until you are ready to bake it. It can also be baked and stored in the fridge or frozen until you are ready to eat it!

Grain-free Biscuits & Egg Casserole

Ingredients

  • 6 Chebe biscuits
  • 1 lb. organic ground pork sausage
  • 1/4 cup Bob's Red Mill tapioca flour
  • 2 cups homemade bone broth
  • sea salt & pepper
  • 10 organic, pasture-raised eggs
  • 1/2 cup Daiya cheddar cheese shreds optional
  • 1/2 tsp. Himalayan garlic salt optional

Instructions

  • Preheat the oven to 350 degrees F. Lightly grease a 9×13 glass baking dish with coconut oil. Cut the Chebe biscuits in half so that you have a top and bottom. Layer the biscuit pieces in the bottom of the pan.
  • In a large cast iron skillet, cook the pork sausage over medium to low heat. Remove the sausage and drain the fat into a large saucepan.
  • Add the homemade broth, tapioca flour, and salt and pepper to taste to the leftover fat. Bring the mixture to a boil over medium heat. Whisk until the gravy thickens. Remove from the heat and stir in the cooked sausage.
  • Pour the gravy over the biscuits that are layered in the pan. In a separate bowl, whisk together the eggs and optional garlic salt. Pour over the gravy. Sprinkle on the optional cheese shreds.
  • Bake for 35-40 minutes. The casserole should be lightly browned around the edges and not jiggly. Let it set for a few minutes before cutting and serving!
