Modern Pioneer Recipe

This grain-free pizza crust recipe is the perfect modern pioneer recipe to make pizza night happen on your homestead!

Like I already mentioned, Friday night in our house is pizza night. That’s just one reason why I love Fridays. Every week I know I always have something to look forward too before the weekend: pizza! When I first went on a low-inflammation diet and cut out all grains, I was in despair at the thought of never being able to have pizza again. Thank goodness for grain-free flours like cassava flour and coconut flour!

Even though this pizza crust may not be like its doughy, stuffed grain counterparts, it is still a fantastic substitute and a healthier crust option. Since it doesn’t use yeast, it lacks the traditional ‘yeasty’ taste, but it still has a mild flavor and the baking powder helps give it some lift and volume.

I find that this pizza crust has a great texture and taste. It is not chewy or stretchy and it does not get too crispy either. This pizza crust recipe is super easy to make and it doesn’t take very long to whip up. Perfect for Friday night pizza dinner!

Creative Pizzas

What’s nice about this pizza crust recipe is that it is similar to sugar cookie dough. I know, it sounds like a weird comparison, but it’s true! You can get creative with your pizza crust! Don’t just stick to the boring circular pizza, although, I must confess, I am a traditionalist and like to make my pizza in the traditional circle fashion. However, you could also try a rectangle, square, or a heart!

It’s not just the shape you can get creative with, but the actual type of pizza is adaptable too! Two of my favorite ideas include making the pizza in a cast iron skillet or making calzones out of the pizza crust dough.

Cast iron skillet pizzas tend to have a crispier crust and a more rustic taste (if there is such a thing). They are the perfect pioneer version of pizza! Calzones, or pizza pockets, are handy for travel or a make ahead pizza option.

I love making my own pizza crust, especially this simple grain-free recipe that is almost like traditional pizza crust dough (although I have never actually had a traditional pizza slice). As far as I’m concerned, this crust is the best! However… on special occassions I do like to splurge and buy a store-bought pizza. It’s my way of ‘ordering out’ pizza. There are two pizzas that I look for in the stores: Daiya and Against the Grain. I also keep a grain-free pizza crust boxed mix stocked in my pantry for when I’m running low on ingredients to make my homemade crust.

Here’s my reviews of the three different pizza alternatives that I use when I’m not making this homemade crust!

#1. Chebe Pizza Crust Mix

-gluten free, grain-free, nut free, and can be made dairy free-

You may have heard me mention the brand Chebe before. They make excellent roll, focaccia, breadstick, and pizza crust mixes. Chebe pizza crust mix is a great grain-free alternative mix that is easy to make and requires minimal ingredients. All you need to add to their pizza crust mix is 2 tablespoons of butter, 2 eggs, and some water!

The only thing I do want to mention when making Chebe pizza crust, is if you don’t bake it for long enough it can be chewy and stretchy. In my opinion, I don’t mind my pizza crust that way, but others may not enjoy the texture. When it is baked for long enough however, it makes a delicious pizza crust! I have used Chebe pizza crust mix to make individual pizza pockets, which turn out fantastic!

#2. Against the Grain Pizzas

-gluten free, grain-free, and nut free-

Against the Grain is another fantastic company who sells grain-free pizza options! They sell pre-made pizzas, pizza crust shells, individual pizzas, and pitas to make pita pizzas with! The three pre-made pizza options are Three Cheese, Pesto, and Pepperoni. My favorite is the Against the Grain pesto pizza, it is fantastic!

The pizza crust shell can be customized to your likings so you can add your own sauce, cheese, and toppings. The individual pizzas are super cute and delicious! They can be made into pizzas or pizza wraps and come in two flavors, fiesta and classic. The fiesta has beans on it and both can be baked and made into a pizza wrap. The pitas can be made into really cute and tasty individual pizzas.

I just want to make a mention that the Against the Grain products are not dairy-free. They also contain canola oil, which is not a healthy oil, that’s why I only have Against the Grain pizza products on special occasions! I do like that all their products are gluten-free and that they try to source all their ingredients locally. Other products that I enjoy by Against the Grain include their bagels, rolls, and baguettes!

#3. Daiya Pizzas

-gluten-free, dairy-free, nut free, corn free, egg free-

Daiya pizzas are an excellent dairy-free pizza option! I absolutely love their ‘fake’ cheese! Daiya makes a variety of different pizzas, however, my favorite flavors are the roasted vegetable pizza and the garlic pizza. One thing I have noticed about Daiya pizzas is that they are a little skimpy on the cheese and heavy on the sauce. I always like to add a little bit more cheese to the Daiya pizza before I pop it in the oven. Other than that, these pizzas have excellent flavor and texture!

Recipe Tips

I try to keep most of my recipes fairly simple, however, my definition of a simple recipe may be different than yours. So here are some tips for ensuring that your pizza crust turns out perfectly!

  • Pay attention to the order in which the ingredients are combined. I have found that combining them in that order makes the dough more workable and smooth.
  • Room temperature eggs are always best. They incorporate into the batter better and actually help give the crust some rise.
  • I have not tried any flour substitutes for the different grain-free flours in this pizza crust recipe. Proceed with changes at your own risk!
  • Make sure you use warm water in this dough to keep it soft and easy to work with.
  • I like to use olive oil to in my pizza crust dough, but avocado oil is another good oil to bake with.
  • If you feel like your dough is too sticky to handle, let it set for a minute so that the flours can absorb some of the moisture.

As for toppings, you can see I used not-so-traditional pizza toppings on the pizza in the photos. For those of you wondering, I used applesace instead of tomato sauce then I layered on baked butternut squash cubes, caramelized onions, Daiya mozzarella cheese shreds, and cooked turkey for a delicious custom-topped pizza! It was delicious!

Ingredients

  • 1 cup Bob’s Red Mill tapioca flour
  • 1 cup cassava flour
  • 2 T. coconut flour
  • 1/4 cup olive oil
  • 2 free-range, organic eggs room temperature
  • 1/2 tsp. sea salt
  • 1/2 cup warm water
  • 1/4 tsp. onion powder optional
  • 1/4 tsp. garlic powder
  • 2 tsp. baking powder
  • pizza toppings of your choice

Instructions

  • Preheat your oven to 400° F. Lightly dust a large pizza stone with cassava flour.
  • In a large mixing bowl, place the olive oil, sea salt, onion and garlic powder, and baking powder. Next add the tapioca flour, cassava flour, and coconut flour. Stir to combine.
  • Then add the eggs and warm water. Stir and knead with the spatula until the dough is shaped into a ball.
  • Press the dough into a circle on the pizza stone. Optional: Brush some additional olive oil over the crust. Top with your favorite pizza toppings.
  • Bake for 30-35 minutes. The crust should be lightly browned on the bottom.

Notes

This pizza crust can easily be made in a buttered 9×13 glass baking dish instead of on a pizza stone.
