Grain-free Brownie Pie (nut free)

Ingredients

  • 1/2 cup organic, grass-fed butter
  • 2 oz. Enjoy Life mini chocolate chips
  • 3/4 cup coconut sugar
  • 1/4 cup Otto's cassava flour
  • 1/2 cup Bob's Red Mill tapioca flour
  • 2 free-range organic eggs
  • 1 tsp. pure vanilla extract
  • pinch of salt
  • 1 cup Enjoy Life mini chocolate chips
  • 1 unbaked grain-free pastry crust

Instructions

  • Preheat the oven to 350 degrees F.
  • In a small saucepan, melt the butter and 2 oz. of chocolate chips over low heat. Once melted, remove from the heat and stir in the coconut sugar.
  • In a large mixing bowl, combine the flours, eggs, vanilla extract, and salt. Pour the chocolate mixture into the batter and stir until everything is combined.
  • Fold in the chocolate chips. Spread the brownie batter into the pie crust.
  • Bake for 18-20 minutes. The top should form a crust but still be gooey in the center. Let cool completely before serving.
