Gluten-free Baked Oatmeal

Ingredients

  • 3 cups Bob's Red Mill gluten-free oats
  • 1/2 cup pure maple syrup
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1/4 cup ground flaxseed meal
  • 2 tsp. ground cinnamon
  • 1 1/2 cups organic coconut milk or water
  • 2 large organic, pasture-raised eggs room temperature
  • 1/4 cup organic coconut oil or butter
  • 1 tsp. pure vanilla extract
  • 2 T. organic molasses optional

Instructions

  • Preheat the oven to 350° F. Lightly spread coconut oil into a 8x8" glass baking dish.
  • Melt the coconut oil in a small saucepan over medium heat.
  • Gently stir together all of the dry ingredients in a large mixing bowl, then add the wet ingredients. Stir until combined.
  • Spread in the glass baking dish. Bake for 28-30 minutes. The edges should be lightly browned.
  • Cut and serve or store in the fridge for later!
