In a large saucepan, heat up the maple syrup, coconut cream, coconut milk, butter, and arrowroot flour over medium heat. Whisk constantly.
Continue to whisk the mixture until it thickens. It should begin to boil first, then take about 2-3 minutes to thicken.
Once the mixture is thickened, remove it from the heat. Whisk in the vanilla extract and pour it into the pre-baked pie crust.
Place a piece of parchment paper over the pie filling to prevent a skin from forming. Allow the pie to set for 4 hours in the fridge.
Once the pie is set up, cut and serve! Store leftovers in the fridge!
