In a large mixing bowl, place the cream cheese, coconut sugar, mint extract, and food coloring. Beat together with hand beaters. Add the CocoWhip and beat until just combined.
Crush 10 oreo cookies and fold them into the mixture. Melt the chocolate chips in a small saucepan over low heat. Spread the melted chocolate on top of the pie.
Crush the remaining oreo cookies and sprinkle them on top of the pie. Freeze the pie for 3 hourse. Slice and serve!
