Dairy-free Cheesy Ham Quiche

Ingredients

  • 1 cup cooked, organic, non-GMO ham heaping
  • 1 cup Diaya cheddar cheese shreds
  • 6 large organic, pasture raised eggs
  • 1/4 cup organic coconut milk
  • salt and pepper
  • 2 T. Bob's Red Mill tapioca flour
  • 1 pre-baked 9" pie crust

Instructions

  • Preheat the oven to 375 degrees F. 
  • Cut the ham into chunks. Sprinkle the ham chunks and some of the Daiya cheese into the pre-baked pie crust. 
  • In a high speed blender (I use a Vitamix), combine the eggs, milk, salt and pepper to taste, tapioca flour, and the rest of the Daiya cheese. Blend until combined. 
  • Pour the egg mixture into the pie crust. 
  • Bake for 30-35 minutes. The center may appear a little jiggly due to the melted cheese. Allow the quiche to set up for 5 minutes before cutting and serving.
