Cut the ham into chunks. Sprinkle the ham chunks and some of the Daiya cheese into the pre-baked pie crust.
In a high speed blender (I use a Vitamix), combine the eggs, milk, salt and pepper to taste, tapioca flour, and the rest of the Daiya cheese. Blend until combined.
Pour the egg mixture into the pie crust.
Bake for 30-35 minutes. The center may appear a little jiggly due to the melted cheese. Allow the quiche to set up for 5 minutes before cutting and serving.
