Wash, peel, and chop the carrots, onion, celery, and bell pepper. Add to the crockpot.
Cook the ground venison in a 12" cast iron skillet with a little bit of bacon fat. Cook it over medium to low heat. Once the meat is mostly cooked, place it in the crockpot.
Add all of the remaining ingredients.
Stir all the ingredients together. Turn the crockpot on high and let the chili simmer for 6-8 hours.
Serve warm with cheese, chips, or a savory bread product!
