You can celebrate Taco Tuesday all day long! Now, not only can you have tacos for dinner, but you can have them for breakfast too! These grain-free maple breakfast tacos are a huge hit in my family. They are super easy to make, can be customized to each family member’s preferences, and are filling and nutritious. Breakfast tacos are the perfect modern pioneer menu item for a delicious, homestyle breakfast meal, a nutritious warm lunch option, or a hearty and family-favorite dinner meal. Guaranteed to be enjoyed by modern pioneers of all ages!

Pioneer Recipe

These grain-free breakfast tacos are the perfect modern pioneer meal to start (or end) your day with! In the pioneer days, eggs were a staple on the homestead. Eggs weren’t so common in the chuckwagon, but once pioneers started homesteading, their homestead flock could provide them with a nutritious source of food. As any homestead chicken raiser probably knows, once your flock starts laying, it’s time to break out the egg recipes or maybe try some new ones!

Since my family has eggs on almost a daily basis, it’s always good to try a new egg recipe once in awhile so that we don’t get tired of having the same meals over and over again. These breakfast tacos were just what we needed to break up the menu!

I consider them a pioneer breakfast because they use wholesome ingredients, can be made from scratch, fit into many restricted diets, and are super simple! These tacos can be made using whatever you have on hand!

  • no refined sugar
  • anti-inflammatory
  • high protein

You can also make these tacos completely from scratch! These grain-free homemade tortillas work great for breakfast tacos. You can also make your own bacon bits, use homegrown herbs, use fresh eggs from your homestead flock, and maybe even make your own cheese!

How to Make a Taco Breakfast Bar

Breakfast tacos are meant to be a simple, healthy breakfast that is filling and nutritious. However, that doesn’t mean the meal has to lack flavor! This maple breakfast taco recipe is the perfect combination of sweet and savory. However, there are countless other ways to make a variety of different breakfast taco flavors!

Just because these tacos use eggs as their main filler doesn’t mean they have to be plain and boring. There are so many taco toppings that pair well with eggs! I tend to keep my meals pretty simple, with just whatever ingredients I have on hand. But if you like multiple flavor options and a full range of taco toppings to choose from, here are some ideas to spruce up your breakfast tacos:

  • organic, homemade salsa
  • herbs (chives, parsley, thyme, basil, etc…)
  • organic, non-GMO ham slices
  • organic, non-GMO pork sausage
  • cracked black pepper
  • hash browns (with white potatoes or sweet potatoes)
  • cooked fish (perch or salmon would go well)
  • homegrown bell peppers
  • sautéed homegrown onion
  • organic black beans

Grain-free Taco Options

I like to make my own grain-free tortillas from scratch. If I’m good, I’ll have a batch of tortillas already made up and kept in the freezer for whenever tacos are on the menu. And if I’m not good, I’ll either have to make a fresh batch of tortillas or I cheat and buy some grain-free taco shells or tortillas.

Hardshell Tacos

I have tried two different brands of hard shell tacos, and each have their perks. The one that I prefer and that my family likes the best is the Siete taco shells. These shells are light, crispy, salty, have just the right amount of flavor, and actually seem like a traditional taco shell. They are a little fragile, but when heated up slightly they become a little more flexible and easier to fill. My family rates these shells as their favorite!

The other brand of taco shells that I have tried are Thrive Market taco shells. These were the very first shells that we tried and we were just happy to have hard shell tacos again! Thrive Market taco shells are thicker than the Siete taco shells. They are sturdier, but tend to break down the middle when you go to eat them, even if they are heated up. Another thing that my family wasn’t a fan of was that these taco shells are no sodium. Being a family who loves our salt, we were always adding more salt to our taco meat to make up for the lack of salt in the shells. However, these shells are great if you are on a low-sodium diet!

Soft Tacos

For soft tortillas, I like to use the Siete almond flour tortillas. When heated in a dry skillet, they become super flexible and contain the breakfast taco ingredients perfectly. If you want a gluten-free soft tortilla option, I have tried the Maria & Ricardo’s oat tortillas and they work great too! A non-traditional way to enjoy breakfast tacos would be to use a large grain-free pancake to make a breakfast wrap with!

How to Store Breakfast Tacos

I usually serve breakfast tacos fresh, but they can easily be turned into a ‘make ahead meal’ or you can save any leftovers!

Grain-free breakfast tacos can be served fresh from the frying pan, saved in the fridge for later, or frozen for a quick breakfast option. The one tip I would have for storing these tacos is not assembling them ahead of time, especially if you are using hard shell tacos. The hard shell tacos will get soggy and soft if the egg is stored in them. Instead, I recommend making up the scrambled egg mixture and saving it separately, along with any toppings you want to serve with the tacos.

The scrambled eggs can easily be stored in the fridge or be frozen, both cooked or un-cooked. Any of the toppings can also be stored in the fridge or be frozen. If you have already opened your taco shells, they can easily be stored in a re-sealable, eco-friendly silicon bag or a homemade re-usable bag. Then, when you need a quick breakfast, just take everything out and assemble your taco! You can do the same thing with homemade soft tortillas.

These make a great on-the-go breakfast, travel breakfast, or packable breakfast! Perfect for the active modern pioneer!

How to Make Maple Breakfast Tacos

One of my favorite versions of breakfast tacos is these maple breakfast tacos. They require a few simple ingredients to create a delicious, slightly sweet but still savory breakfast options. Here’s how I make my maple breakfast tacos:

Maple Breakfast Tacos

  • Soft Tortillas- I find that soft tortillas work best for maple breakfast tacos since they help absorb some of the sticky maple cream.
  • Egg Doneness– You can scramble your eggs until your desired doneness. I like them when they are still soft and a little ‘undercooked’. My dad likes his scrambled eggs to have brown, cooked spots on them. Take the eggs off the heat a little sooner than your desired doneness since they will continue to cook as they are left in the skillet.
  • Sausage– Breakfast sausage links go great in maple breakfast tacos. However, you can also use cooked ham, bacon, or any other breakfast meat of your preference! These homemade venison breakfast sausage links are delicious in breakfast tacos!
  • Maple Flavor– To give your maple breakfast tacos their mapley flavor, you can use a drizzle of maple cream or thick, cold maple syrup.
  • Other Toppings: Other toppings to add to your maple breakfast taco could include some gluten-free maple granola for a nice crunch, some chopped nuts, or a sprinkle of ground cinnamon.

Now for the good part! Whip yourself up some breakfast tacos or create a delicious breakfast taco bar! This recipe can easily be doubled, tripled, or even quadrupled to feed a crowd. Ingredients

  • 8 grain-free tortillas
  • 16 organic, free-range eggs
  • 1/2 cup dairy-free milk
  • sea salt
  • 8-16 organic, non-GMO breakfast sausage links
  • 1 T. bacon fat, butter, coconut oil, or ghee
  • pure maple cream
  • 1/2 cup gluten-free maple granola optional
  • cinnamon sugar optional

Instructions

  • Heat a 12" cast iron skillet over medium heat. Place the breakfast sausages in the skillet. You may need to add a little bacon fat/ghee/butter to keep the sausages from sticking. Cook them until they warm and starting to brown. Transfer the warm sausages to a plate and cover them to keep them warm.
  • Place the 1 T. of bacon fat/butter/ghee/coconut oil in the 12" cast iron skillet. Heat the cast iron skillet over low heat. Spread out the fat/butter/oil and wait for the cast iron skillet to feel warm but don't let it get so hot that it starts steaming.
  • Scramble the eggs in a large mixing bowl using a fork or hand-held beaters. Whisk in the milk and salt to taste. You could also add a dash of cinnamon to the eggs.
  • Pour the scrambled eggs into the warm skillet. Use a spatula to push the eggs towards the center of the pan. Keep scrambling the eggs until they are cooked to your preference. Remove the skillet from the heat and cover the skillet to keep the eggs warm.
  • Heat another skillet over medium heat but don't add any fat or oil. Warm each tortillas in the skillet until the tortilla is soft and flexible. Keep the warmed tortillas in a tortilla warmer or tortilla pocket.
  • To assemble and serve, divide the scrambled eggs into each of the tortillas. Place 1-2 sausage links in each tortilla. Drizzle each taco tortilla with maple cream.
  • Optional: Add a handful of gluten-free maple granola to each taco and garnish each one with a sprinkle of cinnamon sugar.
