Pioneer Recipe

These grain-free breakfast tacos are the perfect modern pioneer meal to start your day with! In the pioneer days, eggs were a staple on the homestead. Eggs weren’t so common in the chuckwagon, but once pioneers started homesteading, their homestead flock would provide them with a nutritious source of food. As any homestead chicken raiser probably knows, once your flock starts laying, it’s time to break out the egg recipes or maybe try some new ones!

Since my family has eggs on almost a daily basis, it’s always good to try a new egg recipe once in awhile so that we don’t get tired of having the same meals over and over again. These breakfast tacos were just what we needed to break up the menu!

I consider them a modern pioneer breakfast because they use wholesome ingredients, can be made from scratch, fit into many restricted diets, and are super simple! These tacos can be made using whatever you have on hand!

You can also make these tacos completely from scratch! I used store-bought hard shell tacos for my breakfast tacos, but you can easily use grain-free homemade tortillas instead. You can also make your own bacon bits, use homegrown herbs, use fresh eggs from your homestead flock, and maybe even make your own cheese!

Breakfast Bar

Breakfast tacos are meant to be a simple, healthy breakfast that is filling and nutritious, however, some of us like to get fancy with our meals! What’s even better is that these breakfast tacos don’t just have to be served at breakfast! Put a fun and unique twist on Taco Tuesday and serve up some egg tacos for dinner instead of traditional tacos!

Just because these tacos use eggs as their main filler doesn’t mean they have to be plain and boring. I have come to realize that many of the ‘traditional’ meals my family enjoys are probably pretty plain compared to other people’s versions of the same meal. And that’s okay with us! But for those of you who like multiple flavors and the full gamete of taco options, here are some ideas to spruce up your breakfast tacos:

  • organic, homemade salsa
  • herbs (chives, parsley, thyme, basil, etc…)
  • organic, non-GMO ham slices
  • organic, non-GMO pork sausage
  • cracked black pepper
  • hash browns (with white potatoes or sweet potatoes)
  • fresh caught fish (perch or salmon would go well)
  • homegrown bell peppers
  • sautéed homegrown onion
  • organic black beans

Choosing a Taco Shell

When I first found grain-free taco shells, it was like finding gold! I couldn’t believe it! That being said, I do make some pretty tasty grain-free tortillas that we use for soft-shell tacos. But nothing beats the good ol’ crunch of a hard-shell taco every once in awhile!

I have tried two different brands of taco shells, and each have their perks. The one that I prefer and that my family likes the best is the Siete taco shells. These shells are light, crispy, salty, have just the right amount of flavor, and actually seem like a traditional taco shell. They are a little fragile, but when heated up slightly they become a little more flexible and easier to fill. My family rates these shells as their favorite!

The other brand of taco shells that I have tried are Thrive Market taco shells. These were the very first shells that we tried and we were just happy to have hard shell tacos again! Thrive Market taco shells are thicker than the Siete taco shells. They are sturdier, but tend to break down the middle when you go to eat them, even if they are heated up. Another thing that my family wasn’t a fan of was that these taco shells are no sodium. Being a family who loves our salt, we were always adding more salt to our taco meat to make up for the lack of salt in the shells. However, these shells are great if you are on a low-sodium diet!

Like I mentioned earlier, these breakfast tacos don’t have to be made with hard shell tacos either. You can easily use a soft tortilla or even large pancakes to make a breakfast wrap with!

How to Store Breakfast Tacos

I usually serve breakfast tacos fresh, but they can easily be turned into a ‘make ahead meal’ or you can save any leftovers!

Grain-free breakfast tacos can be served fresh from the frying pan, saved in the fridge for later, or frozen for a quick breakfast option. The one tip I would have for storing these tacos is not assembling them ahead of time, especially if you are using hard shell tacos. The hard shell tacos will get soggy and soft if the egg is stored in them. Instead, I recommend making up the egg mixture and saving it separately, along with any topping you want to serve with the tacos.

The scrambled eggs can easily be stored in the fridge or be frozen, both cooked or un-cooked. Any of the toppings can also be stored in the fridge or be frozen. If you have already opened your taco shells, they can easily be stored in a re-sealable, eco-friendly silicon bag or a homemade re-usable bag. Then, when you need a quick breakfast, just take everything out and assemble your taco!

These make a great on-the-go breakfast, travel breakfast, or packable breakfast! Perfect for the active modern pioneer!

Breakfast Taco Recipe Tips

Okay, these grain-free breakfast tacos are super simple! I couldn’t hardly think of any recipe tips to give you! Most of the tips I thought of pertain to cooking the eggs. Cooking eggs in a cast iron skillet is really easy, so I don’t think you should have any problems!

Recipe Tips:

  • Hot Skillet- Having a hot cast iron skillet is key. When you see steam rising from the skillet, you know it’s ready to scramble the eggs in. The hot heat cooks the eggs fast and creates minimal mess in the pan.
  • Egg Doneness– You can scramble your eggs until your desired doneness. I like them when they are still soft and a little ‘undercooked’. My dad likes his scrambled eggs to have brown, cooked spots on them. Take the eggs off the heat a little sooner than your desired doneness since they will continue to cook as they are left in the skillet.
  • Flavor– As soon as the eggs go in the skillet, add any seasonings you want, then start scrambling them. My preferred seasoning is garlic salt.
  • Heating & Storing– To keep the eggs warm for serving, keep them in the cast iron skillet. If you are making them up ahead of time, allow them to cool a little bit before putting them in a storage container to be placed in the fridge or freezer.
  • Remember: Don’t use soapy water to wash your cast iron with and dry it using heat, not a drying cloth!

Now for the good part! Whip yourself up some breakfast tacos or create a delicious breakfast taco bar! This recipe can easily be doubled, tripled, or even quadrupled to feed a crowd. Add whatever spices you want and pile on your favorite toppings. These grain-free breakfast tacos are a favorite on my homestead menu!

Grain-free Breakfast ‘Tacos’

Ingredients

  • 8 Siete grain-free taco shells
  • 16 organic, free-range eggs
  • 1/4 cup dairy-free milk
  • 1/4 tsp. garlic salt
  • 1/2 cup Daiya cheddar cheese shreds
  • 1/2 cup organic bacon bits
  • 6 fresh chives, chopped
  • 1/2 cup chopped veggies of choice e.g. bell pepper, spinach, onion, mushroom
  • 1 T. bacon fat, butter, coconut oil, or ghee divided

Instructions

  • For preheated taco shells: Preheat the oven to 350°F. Lay the taco shells out on a baking sheet or pizza stone. Set aside.
  • Place half of the bacon fat or whatever you are using in a 12" cast iron skillet. Heat the cast iron skillet over low heat. Spread out the bacon fat and wait for the cast iron skillet to start steaming.
  • Saute the chopped vegetables until they are cooked and warm.
  • Scramble the eggs in a large mixing bowl using a fork or hand-held beaters. Whisk in the milk and cheese shreds. Pour the scrambled eggs into the pan with the veggies and sprinkle on the garlic salt or any other seasonings you desire.
  • Use a spatula to scramble the eggs. Scramble them until they are cooked to your preference. Remove the skillet from the heat. Place the taco shells in the oven for 2-3 minutes.
  • Note: I have also skipped preheating the taco shells since the hot eggs warm the shells enough to keep them from breaking.
  • Get out the Epic bacon bits, chopped herbs, and any other desired toppings. Assemble your tacos to your desired preference and enjoy!

Notes

To spruce up your tacos, season the eggs with black pepper, herbs, and other spices of your choosing. For toppings, provide the choice of hash browns, sautéed onion, black beans, ham or sausage, and any other desired toppings!
