You would never guess that this creamy soup is dairy-free, never mind gluten-free and grain-free too! It is the perfect way to use up extra potatoes, get some veggies in, benefit from bone broth, and still enjoy a delicious, flavorful meal!

Modern Pioneer Recipe

Potatoes are most certainly a pioneer food, being that they were relatively easy to grow and store during the early pioneer days. However, I wouldn’t classify this potato soup as being a pioneer recipe due to the fact that I’m not entirely sure the early pioneers would have made soup out of their potatoes.

Beef or venison stew was definitely a more traditional pioneer soup option, both of which would include a hefty helping of potatoes. Mashed potatoes would have also been a staple on the pioneer table, right along side of homemade biscuits, baked beans, or beef or venison.

Back to the potato soup, it makes a perfect modern pioneer recipe that can easily be made from scratch and can use homegrown ingredients! Homegrown potatoes, onions, and celery would all make for a delicious, modern pioneer potato soup! And don’t forget to make your own chicken broth or beef broth to use in the soup!

You could even go so far as using home-raised bacon or raw milk if you are not dairy intolerant! Even though I am not that far along in modern pioneer journey, it is definitely a goal of mine to raise my own meat and dairy!

Perfect Soup Potatoes

Potatoes originate from South Africa, where they have the greatest variety of different potatoes. Even though potatoes come in all shapes and sizes, I want to focus on what potatoes work the best for potato soup!

In all honesty, any potato can be used for potato soup, even sweet potatoes if you want to make sweet potato soup! Red potatoes, white potatoes, russet potatoes, they would all make a delicious dairy-free potato soup! However, I would really like to draw attention to my favorite potatoes: new potatoes.

Being on an anti-inflammatory diet, I don’t often have potatoes. While they are cheap and economical food choice, they don’t fit in well to our anti-inflammatory, low-starch diet. With that being said, new potatoes are my weakness. New potatoes are not their own variety of potato. Instead, new potatoes are any potato that has been harvested early on in the growing season before the potato has fully matured.

New potatoes are often smaller, have a high moisture content, are thin skinned, can be sweeter tasting, and are less starchy. I love using new red potatoes in this dairy-free potato soup! By using new potatoes in this recipe, you don’t have to peel the potatoes because the skin is so thin.

New potatoes also cook down into a naturally creamy consistency, which perfectly compliments this dairy-free potato soup!

While I don’t often have potatoes in my diet, new potatoes are definitely a special treat during the summer that I can enjoy guilt-free because they are less starchy and more nutritious than their mature counterparts! Plus, I love getting the freshly harvested new red potatoes from our summer CSA farm share!

About the Ingredients

While I already mentioned my favorite potatoes to use in this soup, I also wanted to cover some of the other delicious and nutritious ingredients included in this potato soup recipe! One reason why my mom loves soup is the fact that it is an easy and delicious way to feed us all some veggies and nutritious bone broth. When I decided to make potato soup, I knew she was going to be a lot more open to the idea of a potato soup if I made sure to include some other veggies in the recipe too!

Thus I went about figuring out a way to hide some veggies in this creamy potato soup without taking away from the main star of the dish: new potatoes. My chosen hidden veggies include onions (traditionally a classic pairing with potato soup) and celery. You could also include carrots if you don’t have picky-veggie eaters in your family. Along with the veggies, I also made sure to include lots of nutritious homemade bone broth.

Here are some of the other nutritious ingredients included in this potato soup!

Potato Soup Ingredients:

  • Onions– Onions boost the immune system and reduce inflammation. They add the perfect flavor to this soup! You can use red onions, yellow onions, sweet onions, shallots, or green onions in this recipe!
  • Celery– Celery is a great source of anti-oxidants. Tender, freshly harvested, homegrown celery is delicious in this soup!
  • Bone Broth– Homemade bone broth is bursting with beneficial collegan, chocked full of vitamins and minerals, boosts the immune system, and is good for gut health.
  • Coconut Milk– Coconut milk contains healthy fat and is the perfect anti-inflammatory milk substitute for creating a creamy soup!
  • Garlic– Garlic is a power food that fights sickness and boosts the immune system! I love using my homegrown garlic in this soup recipe!

Serving & Storing

Dairy-free potato soup is delicious on its own! However, in my family, it’s tradition to serve soup with a bread-based side. Whether it’s venison chili served with homemade cheese rolls or butternut squash soup served with pumpkin coffee cake, having a side with our soup makes the soup go for several meals and helps the meal be well-rounded and filling.

For this dairy-free potato soup, I have several favorite sides for serving with the soup. I like to make grain-free bread using Chebe all-purpose mix. It is a light bread and is delicious when toasted and topped with garlic salt! It makes the perfect savory side to this potato soup!

These grain-free cheese rolls would also be an excellent side to potato soup! Muffins are a weakness of mine, I absolutely love muffins! So of course, I would naturally recommend that these grain-free chocolate chip muffins would pair great with potato soup!

Another reason why soup is popular with my family is becuase it is easy to store leftovers or save extras for traveling or times when we need a quick, pre-made meal. This dairy-free potato soup is no different! You can easily freeze leftovers in glass jars to save for later use. The leftovers unthaw just fine and the soup can be re-heated in minutes for a quick, delicious, homemade meal!

Recipe Tips

Dairy-free potato soup is so easy to make! You really can’t go wrong when making soup. The process is simple and can be done in just a few minutes. Once the potato soup is made, you can let it continue to cook and simmer until you are ready to serve it! Here are a few recipe tips to ensure your potato soup turns out fantastic!

  • Finely dicing the potatoes is important. The small size will help them cook faster and makes the soup creamy.
  • If you like a smooth potato soup, use an immersion blender to blend the soup after it has simmered for 1 hour. Add the cheese and blend one more time for a smooth and creamy texture.
  • For none picky vegetable eaters, you can leave the onion and celery in large pieces. However, my family likes the finely chopped vegetables becuase they take back stage to potatoes.
  • You can use any kind of homemade bone broth in this soup. My favorites include chicken broth or beef broth.
  • I have not tried any other milks other than coconut milk in this soup. The cream from the coconut milk helps give the soup a creamy texture.
  • You can use arrowroot flour or tapioca flour in place of the cassava flour.

Dairy-free Potato Soup

Ingredients

  • 2 lbs. organic new potatoes (about 6 cups, finely diced)
  • 4 cups homemade bone broth
  • 1 medium onion finely chopped
  • 2 stalks celery washed and finely chopped
  • 1 bulb garlic crushed
  • 7 slices organic, non-GMO bacon chopped
  • 1 cup organic full-fat coconut milk
  • 1 tsp. sea salt
  • 1 tsp. dried thyme
  • 3 T. cassava flour
  • 1 cup Daiya cheese shreds

Instructions

  • In a large saucepan, cook the bacon pieces over low heat until they are done. This will take 5-8 minutes. Remove the bacon pieces but leave the bacon fat in the bottom of the pan.
  • Add the chopped onion, chopped celery, finely diced potatoes, crushed garlic, and thyme. Cover the pot and cook the mixture until the potatoes are soft, about 10-15 minutes. Stir occassionally.
  • In a seperate bowl, whisk together the cassava flour and coconut milk. Add the milk mixture to the potato mixture along with the broth and sea salt. Stir until everything is combined.
  • Bring the soup to a simmer. Simmer for 1 hour. Optional: Transfer the soup to a slow cooker and allow it to simmer until you are ready to serve the soup.
  • Once the soup has simmered for 1 hour, use a potato masher and mash the potatoes until desired constistency is achieved.
  • About 10 minutes prior to serving, add the bacon pieces and cheese. Stir until everything is incorporated. Simmer until ready to serve!

Dairy-free potato soup with bacon pieces has become a new family favorite in my house! I will probably only make this soup when I have new potatoes available because the new potatoes are less starchy and better for a low inflammation diet. But having this seasonal soup on occasion makes it all the more special when I do get to make it! The dairy-free cheese makes this soup thick and creamy, and the small chunks of potato provide just the right texture to the creamy broth. The simplicity of this recipe and wholesome benefits provided by the ingredients make this dairy-free potato soup the perfect allergy-friendly modern pioneer menu item!
