Paleo Sugar Cookies- nut free

It’s already December! Which means it’s  time to get our holiday cheer on! December is probably my favorite month. I love everything about it: the snow, decorating, family gatherings, warm fires, hot cocoa, and of course, baking! It’s time to pull out those holiday recipes and even try some new ones! One of my favorite things to bake are these Paleo Sugar Cookies!

The cookies:

These paleo sugar cookies are grain-free, gluten-free, nut free, and corn free! I love their texture and they taste delicious! Even though they have quite a bit of coconut flour in them, they do not have a strong coconut flavor. The dough is very easy to work with, which is something that I always consider when I have to roll out dough. I can easily handle it without it sticking all over my fingers and hands.

The frosting:

After I found a sugar cookie recipe that I could make, I had to find a frosting recipe.  What’s a sugar cookie without frosting!? The frosting recipe was a little harder to nail down. I had to make something that was not too buttery and did not have little sugar crystals in it. Maple syrup  would not do because it turned the frosting brown, which is ok if you like brown frosting. I finally settled on a combination of butter, vanilla extract, coconut milk, and powdered xyla. The frosting is easy to use and tastes delicious with the paleo sugar cookies.

The toppings:

There are always three layers to a good sugar cookie, the cookie, the frosting, and the toppings. So far I have the cookie and the frosting, now it’s time for the toppings! I love decorating my sugar cookies. Here are some decorating ideas that I use!

Paleo Sugar Cookies
Instructions
  1. Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.
  2. In a large mixing bowl, mix together the butter, coconut sugar, and vanilla extract.
  3. Add the rest of the ingredients and stir until combined. You should be able to handle the dough without it sticking to your hands. Divide the dough in half.
  4. Prepare two pieces of wax paper and sprinkle tapioca flour on one piece. Place half of the dough on the floured wax paper and flatten the dough slightly.
  5. Using a rolling pin, roll out the dough until it is an 1/8 of an inch thick. Peel pack the top layer of wax paper and use cookie cutters to make the cookies.
  6. Transfer the cookies to the cookie sheets with a metal spatula. Continue the process until all the dough is used up.
  7. Bake the cookies for 8-10 minutes. Allow them to cool before frosting.
  8. To make the frosting: Beat together all of the frosting ingredients. Add more coconut milk if the frosting is not smooth enough. Enjoy frosting the cookies!
Recipe Notes

If you are making both big and small cookies, place all the big cookies on one cookie sheet and all the small cookies on another cookie sheet. Big cookies bake for 10 minutes and small cookies bake 8 minutes.
