Line a 9x9" glass baking dish with unbleached parchment paper.

Quickly stir the butterscotch mixture into the whole oats until everything is evenly incorporated. Spread the mixture evenly into the 9x9" baking dish.
In a medium saucepan, heat the chocolate chips and coconut oil over low heat. Stir until the chocolate chips and coconut oil are melted and smooth.
Spread the chocolate topping over the butterscotch bars. Allow the chocolate to harden at room temperature or in the fridge before slicing the bars.Enjoy!
