Grain-free Chocolate Chess Pie

Ingredients

  • 1 cup coconut sugar
  • 1/4 cup Bob's Red Mill tapioca flour
  • 1/4 cup organic, grass-fed butter melted
  • 3/4 cup coconut milk
  • 3 large pasture-raised, organic eggs room temp.
  • 1 tsp. pure vanilla extract
  • 1/4 cup cacao powder
  • 1 9" unbaked grain-free pie crust

Instructions

  • Preheat the oven to 375°F.
  • Whisk together the melted butter, eggs, and vanilla. Add the coconut sugar, tapioca four, cacao powder, and coconut milk and whisk to combine. Alternately you can beat with a hand mixer until everything is combined.
  • Pour the batter into the 9" unbaked pie crust.
  • Bake for 45 minutes. Let the pie cool completely before cutting and serving.
