Dairy-free Maple Bacon Frittata

organic sweet potato, shredded

organic, non-GMO bacon
pre-cooked

organic, pasture-raised eggs

pure maple syrup

organic ground cinnamon

bacon fat, for frying
Instructions
Preheat the oven to 400 degrees F. Place 1 T. of bacon fat into a 9" cast iron skillet. Heat the cast iron skillet over medium to low heat. Spread out the bacon fat with a spatula.
Add the shredded sweet potato to the skillet and sprinkle on the cinnamon. Sauté the sweet potato until it is soft (about 5 minutes). Add the remaining 1 T. of bacon fat as you cook the sweet potato.
While the sweet potato is sautéing, beat the eggs and maple syrup together in a medium mixing bowl. Once the sweet potato is soft, turn off the heat and pat it into a flat layer on the bottom of the skillet.
Pour the eggs onto the sweet potato. Crumble the bacon pieces and sprinkle them over the eggs.
Bake for 10-15 minutes. Enjoy!
