Grain-free French Toast (nut free)

Ingredients

Grain-free Bread (nut free)

  • 4 large pasture-raised, organic eggs room temp
  • 1/4 cup organic, grass-fed butter or coconut oil
  • 2 tbsp. pure maple syrup
  • 1/3 cup water
  • 1 cup cassava flour
  • 1 1/2 cups Bob's Red Mill tapioca flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder, corn free
  • 1 tbsp. tapioca flour for kneading the dough

French Toast Mixture

  • 3 large organic, pasture-raised eggs
  • 3 tbsp. organic coconut milk
  • 1 tsp. organic, ground cinnamon
  • 1 tbsp. organic, grass-fed butter for frying in

Instructions

Grain-free Bread

  • Preheat the oven to 350 degrees F. Butter an 8.5 inch by 4.5 inch nonstick bread pan. 
  • In a small saucepan, heat the butter and maple syrup over low heat until the butter is melted. Stir occasionally. 
  • In a large mixing bowl, whisk together the cassava flour, tapioca flour, salt, and baking powder. Add the melted butter mixture and give the mixture a few stirs, then add the eggs and the water. Stir until everything is combined. 
  • Sprinkle the additional 1 tablespoon over the dough and use your hands to knead the dough into a bread loaf shape. You can sprinkle additional tapioca flour onto the dough if needed. Place the dough into the buttered bread pan. 
  • Place the bread pan in the oven and bake for 30-35 minutes. The bread should sound hollow when you knock on it. Once the bread is done, remove it from the bread pan immediately and place it on a cooling rack.  
  • Allow the bread to cool completely before slicing. You can cut the slices into your desired thickness. For french toast, thinner slices tend to work better since they soak up the egg mixture better. 

French Toast

  • In a shallow bowl, whisk together the eggs, milk, and cinnamon. I like to use a fork for whisking my egg mixture. Set a few of your bread slices into the mixture. Turn them over to coat both sides. 
  • Heat a large frying pan or cast iron skillet over low heat. Add a portion of the 1 tablespoon of butter to the pan. Once the pan is hot (sprinkle some water on the pan and see if it sizzles), place the bread slices that have been soaking in the egg mixture onto the pan. Allow the bread slices to fry for about 1-2 minutes on each side. 
  • Continue the process of coating the bread slices in the egg mixture and frying them. Add more butter to the pan as needed. You can serve the french toast with butter, maple syrup, fruit, or other toppings!
