Nut-Free Trail Bars (gluten free)

Ingredients

  • 3 1/2 cups Bob's Red Mill gluten free whole rolled oats
  • 1/2 cup organic sunflower seeds
  • 2/3 cup organic butter, melted
  • 1/4 cup organic coconut sugar
  • 1/4 cup pure maple syrup
  • 1 large ripe banana, mashed
  • 1 tsp. pure vanilla extract
  • 1/2 cup organic finely shredded coconut
  • 1/4 cup organic ground flax seeds
  • 2 organic, free-range eggs
  • 3/4 cup Enjoy Life semi-sweet mini chocolate chips
  • 1/4 cup unsweetend coconut milk

Instructions

  • Preheat your oven to 350 degree F. Lightly butter a 9x13" glass baking dish.
  • In a large mixing bowl, combine your melted butter, coconut sugar, maple syrup and mashed banana. Add your egg and vanilla extract and stir until combined.
  • Next add your whole oats, sunflower seeds, shredded coconut, and flax seeds. Stir until combined and then add your chocolate chips. Stir in the chocolate chips until they are evenly distributed. Add the coconut milk and stir until combined.
  • Spread into the 9x13 glass baking pan. Bake for 12-15 minutes. Cool and cut into bars!
