Melt the coconut oil in a small saucepan. Line a 9x13 glass baking dish with parchment paper. If you are using butter, heat it in the small saucepan until it browns.
In a large mixing bowl, beat together the peanut butter, coconut sugar, and salt. Add the coconut oil or butter and beat until everything is thoroughly combined.
Spread the peanut butter mixture evenly around in the 9x13 glass baking dish. Allow the peanut butter mixture to freeze for 20-30 minutes.
Melt the chocolate ingredients in a small saucepan over low heat. Spread it over the peanut butter layer. Freeze until the chocolate is hardened. Cut into desired squares for serving. Enjoy!
Buckeye Balls
Make the peanut butter mixture in a large mixing bowl. Freeze the batter for 30-40 minutes.
Once the batter is firm enough to handle, roll it into balls. I made 36 balls. Place the balls on a baking sheet lined with parchment paper and put them back in the freezer. Let them freeze for another 30-40 minutes.
Melt the chocolate ingredients in a small saucepan then transfer the chocolate to a small bowl. Use a toothpick to dip the balls into the chocolate and then place them back on the tray.
Store the buckeyes in the fridge or freezer and enjoy!
