Paleo Buckeye Balls & Bark

Ingredients

Peanut Butter Mixture

  • 1 1/2 cups organic creamy peanut butter
  • 1/2 cup coconut oil or organic butter
  • 1/3 cup coconut flour
  • 1/2 cup Bob's Red Mill tapioca flour
  • 1/2 cup coconut sugar, powdered
  • 1/4 tsp. salt

Chocolate

  • 1/3 cup coconut oil or organic butter
  • 1/4 cup cocoa powder
  • 1/4 cup pure maple syrup

Instructions

Buckeye Bark

  • Melt the coconut oil in a small saucepan. Line a 9x13 glass baking dish with parchment paper. If you are using butter, heat it in the small saucepan until it browns.
  • In a large mixing bowl, beat together the peanut butter, coconut sugar, and salt. Add the coconut oil or butter and beat until everything is thoroughly combined.
  • Spread the peanut butter mixture evenly around in the 9x13 glass baking dish. Allow the peanut butter mixture to freeze for 20-30 minutes.
  • Melt the chocolate ingredients in a small saucepan over low heat. Spread it over the peanut butter layer. Freeze until the chocolate is hardened. Cut into desired squares for serving. Enjoy!

Buckeye Balls

  • Make the peanut butter mixture in a large mixing bowl. Freeze the batter for 30-40 minutes.
  • Once the batter is firm enough to handle, roll it into balls. I made 36 balls. Place the balls on a baking sheet lined with parchment paper and put them back in the freezer. Let them freeze for another 30-40 minutes.
  • Melt the chocolate ingredients in a small saucepan then transfer the chocolate to a small bowl. Use a toothpick to dip the balls into the chocolate and then place them back on the tray.
  • Store the buckeyes in the fridge or freezer and enjoy!
