Grain-free Sweet Potato Pie

Ingredients

  • 2 cups cooked sweet potato
  • 1/2 cup pure maple syrup
  • 2 T. unsulfured molasses
  • 2 large, organic eggs
  • 1/2 tsp. organic, ground ginger
  • 1 tsp. organic, ground cinnamon
  • 1/4 tsp. organic, ground cloves
  • 2 T. organic butter or coconut oil melted
  • 1 1/2 cups coconut milk or oat milk
  • 1 unbaked pie crust

Instructions

  • Preheat oven to 425 degrees F. Place the sweet potato, maple syrup, molasses, eggs, and spices in a blender. Blend until combined.
  • Add the butter and coconut milk. Blend until smooth. Pour into an unbaked pie crust.
  • Bake for 15 minutes. Keeping the pie in the oven, reduce the temperature to 300 degrees F. Bake for another 30-40 minutes. The filling should be firm around the edges and slightly soft in the center.
  • Remove from the oven and allow to completely cool before serving!
