Preheat oven to 425 degrees F. Place the sweet potato, maple syrup, molasses, eggs, and spices in a blender. Blend until combined.
Add the butter and coconut milk. Blend until smooth. Pour into an unbaked pie crust.
Bake for 15 minutes. Keeping the pie in the oven, reduce the temperature to 300 degrees F. Bake for another 30-40 minutes. The filling should be firm around the edges and slightly soft in the center.
Remove from the oven and allow to completely cool before serving!
