  • Ready for fall flavors! I recently made a batch of gluten-free homemade animal cookies and added a unique twist to the recipe... chai tea. Simply follow the recipe and then cut open two chai tea bags and add them to the recipe. 

I used two rooibos chai tea bags and the flavor was spot on! Delicious!

  • Nothing beats a fresh batch of homemade salsa! My recipe varies every year depending on what I have on hand, but these are the basics that go into every recipe:

~ homegrown tomatoes
~ green peppers
~ hot peppers
~ fresh onions
~ salt
~ cumin
~ cayenne pepper
~ garlic
~ cilantro
~ tomato paste (if you want a thicker consistency)

If you plan on canning the salsa, you will want to add some apple cider vinegar and heat up the salsa prior to water bath canning. Or simply enjoy the salsa fresh! It will keep in the fridge for up to a week.

  • Late season leafy greens, homemade gluten-free naan, homemade tomato pesto sauce, and fresh eggs make for a delicious fall lunch or breakfast. 

Start by layering one naan with tomato pesto sauce and cheese. Toast the naan until the cheese is melted. Meanwhile, heat a skillet over medium heat. Cut a hole out of a second naan and crack an egg into the hole. Fry the naan and egg in the skillet until the yolk is set.

Sandwich the two naans together with a handulf of leafy greens thrown between them!

  • Got an abundance of tomatoes sittin around? I made a batch of tomato 'pesto' for the first time and now I love using it in sandwiches, as pizza sauce, or as a dipping sauce!

~ 5-6 lg tomatoes, quartered
~ 1 red bell pepper, quartered
~ 1/4 c. olive oil
~ 1 c. basil
~ 1 tsp. salt
~ 1 tsp. garlic powder

Roast the tomatoes and peppers at 400°F for 20 minutes. Allow them to cool for 20-30 minutes. Then place them along with the remaining ingredients in a food processor. Blend until the desired constistency is achieved. Store the sauce in an airtight container in the fridge for up to a week.

  • Peach hand pies are a special treat to make when peaches are in season! I like using my grain-free pie crust recipe or a box of CHEBE cinnamon roll mix (grain-free & gluten-free) to make simple hand pies. 

PRO TIP: You don't have to peel the peaches! I don't even notice the peach peels in the hand pies.

  • Grilling season is not over yet! One of my favorite ways to cook fresh-caught walleye is in a cast iron skillet on the grill. Throw on some herbal seasonings, salt, and a couple pats of butter and your grilled walleye will be flakey, tender, and delicious!
