Do you still have leftover dyed eggs hanging out in the fridge from Easter? My favorite way to use up leftover boiled eggs is to make a simple egg salad for sandwiches or to top leafy greens with. Here's what I put into my classic egg salad:

I enjoy the flavor of cinnamon in my baked goods... but did you know that cinnamon is a beneficial holistic supplement too? While there is some debate as to whether chickens can enjoy the flavor of cinnamon, there is no doubt that they can benefit from the holistic properties found in cinnamon.

Another batch of cuteness hit the homestead over the weekend! This time, instead of being hatched by a mother hen, I hatched these chicks using my Rcom incubator. Which means I will also be hand-raising them for the first few days of their life until they are strong enough to be given to mama hen and her brood of 8 rowdies.

And while it may not be this carrot cake baked oatmeal (not everyone loves carrot cake on my homestead), it will still be just as flavorful, delicious, and maply! I made a batch of this gluten-free carrot cake baked oatmeal just for snacking on and enjoyed every bite.

Last week was an exciting week of growth and new life! Momma hen hatched out 8 little chicks, which never gets old on the homestead. And to end the week, the seeds I had started for the garden this year had just started germinating. The brooder is full and the grow lamps are on... it's a busy and fun time of year on the homestead!
