A few of my favorite fall ingredients include chocolate, chocolate, and chocolate (maybe with a little peanut butter thrown in the mix too). Ok, so I do like to mix things up ever so often with a bit of pumpkin and zucchini. These fantastic gluten-free chocolate chip zucchini cookies are the best zucchini cookie I have ever made! I like to think of my zucchini cookies as being similar to my pumpkin oatmeal cookies, they both have oats in them, they both have a vegetable in them, they both use butter, and they both have chocolate chips in them. What more could you ask for?
I love oats! You may be wondering why you see a lot of recipes that call for oats when this blog is supposed to contain mostly grain-free recipes. Here’s why: My mom, Anna, and I were first put on a strict anti-inflammatory diet to help heal gut problems, allergies, and asthma. The only things we could eat were meat and vegetables. As our symptoms improved we could add in fruit and grain-free flours.
Eventually we didn’t have to be so strict. We still try to stick to a mostly low sugar, grain-free, gluten-free, and anti-inflammatory diet. Ok, back to the oats, oats are lower on the inflammation scale than a lot of other grains. As we slowly splurged with oats in our baking we found that they did not cause a high increase in inflammation. Thus, because I love oats and I now can have oats, you see quite a few recipes that call for oats.
I dug this recipe out when my mom was making chocolate zucchini bread and she had some leftover shredded zucchini. Originally this recipe did not contain a grain-free flour and it also called for a lot of cane sugar. I substituted the original gluten-free flour for tapioca flour. I also changed the can sugar to xyla and coconut sugar and reduced the amount. These cookies are still plenty sweet and also have a great texture.
There are several things that I like about this recipe:
- it makes a lot of cookies so you don’t feel bad about having two
- they are gluten-free
- it is relatively low in sugar
- the other flour that is used in the recipe is grain-free
- they contain a vegetable and still satisfy the sweet tooth
