Hey everyone! To start off this last week in March, I have a monster cookie recipe to share with you. I have made this easy and fun recipe many times before and the cookies always turn out great. I particularly like that they are low in sugar, that way I can have them during the week. They are healthy too, well sorta, what I like to call healthy. You know, like chocolate, oats, peanut butter, pretty much the best combo ever! These cookies can also be made regular size, yielding about three dozen.
Monster Cookie Recipe:
1/2 c. organic butter
1/4 c. xyla
1/4 coconut sugar
2 large eggs
1 c. natural peanut butter (I like using Kroger’s Simple Truth brand, it is nice and creamy and not too dry)
1 tsp. vanilla extract
3 c. gluten-free rolled oats (We use Bob Red Mill’s gluten-free whole oats)
1 1/4 tsp. baking soda
1/4 c. unsweetened shredded coconut
1/4 c. organic chocolate chips

Preheat your oven to 350 degrees Fahrenheit. In a large mixing bowl, combine the melted butter, eggs, sugar, and peanut butter. Mix well, using a hand held beater or spatula. Next, add the vanilla, baking soda, and oats. Combine these well. Once your batter is thoroughly mixed, add in the chocolate chips, coconut, and any other extras you desire. Line two cookie sheets with unbleached parchment paper. I used a cookie scoop to scoop my cookies. Two heaping scoops are needed to get the cookies the desired size. Pat the cookie dough flat to form a circle. Bake for 9 minutes or until brown around the edges. Let cool for 5 minutes before removing from the baking sheet. Enjoy!
Theses cookies freeze very well.
