I decided I would start off the week with a new recipe.

Pumpkin pie cookies

Here is the recipe.


1 1/2 c. pumpkin puree

1 c. coconut butter (softened)

1/2 c. butter

1 tsp. vanilla

2 tsp. coconut nectar

1/2 cup of tapioca

1/3 c. coconut flour

2 tsp. pumpkin pie spice

pinch of salt

1/2 c. chocolate chips (optional)


Preheat oven to 350 degrees.

Blend the pumpkin, coconut butter, butter, vanilla, and coconut nectar until smooth.

Add in the remaining ingredients and mix with a spatula.

Line a baking sheet with parchment paper and using a tablespoon drop cookies onto the pan.

Bake for 11 min. or until lightly browned.
