Grain-free Molten Lava Cakes

Molten Lava Cakes, those three words alone make my mouth water. What’s even better is that they are grain-free, dairy-free, gluten-free, corn free, nut free, and low in sugar! By now you must be wondering what could possibly be in them! You will find out soon enough. For now, lets talk about the marvelous qualities of these delicious, grain-free molten lava cakes!

I stumbled across a molten lava cake recipe a few years ago and could not believe my good fortune! These molten lava cakes are like fudge, brownies, cake, and chocolate syrup all combined! They are very easy to make, require only a few ingredients, and taste fantastic! There are two things you need to be careful of though:

  • over cooking them, which turns them into a chocolate cake (still delicious, but lacking the lava part)
  • and eating all of the molten lava cakes at once!

You can serve these grain-free molten lava cakes right in their ramekins, or you can remove them from their ramekins and serve them on a plate. I personally like to add little extras to my molten lava cakes. A few of my favorites include coconut milk ice cream, dairy-free chocolate syrup, and organic fresh raspberries. Now, lets take a look at what’s in this incredible dessert!

Grain-free Molten Lava Cakes

Instructions
  1. Preheat the oven to 375 degrees F. Oil three or four ramekins with butter or coconut oil. Sprinkle a little bit of cacao powder in them.
  2. Melt the chocolate chips and coconut oil in a small sauce pan over low heat. Stir the mixture occasionally to make sure it doesn't burn.
  3. In a medium size mixing bowl, beat together the eggs, honey, vanilla, and salt. Blend with a hand mixer on medium to high speed for 4 minutes.
  4. Gently stir in the melted chocolate mixture, then add the coconut flour and cacao powder. Fold the flour into the batter.
  5. Divide into three or four ramekins. Place the ramekins on a baking sheet and bake for 10-12 minutes. The key is not to over bake this dessert. The center should look very gooey when you remove them from the oven.
  6. These are best served warm!
