Welcome to cookie mania! (well not quite 🙂 This week I have been working on some huge felt cookies! They are so much fun to make. I cut out 2 circles of the color fabric I want and then cut out any chocolate chips or oatmeal pieces that I want to sew on it. I also put two pieces of batting between the two fabrics to give the cookie some depth.
I have made 4 giant cookies so far. I have made chocolate chip oatmeal, peanut butter with chocolate swirl (the swirl is brown fabric paint), pumpkin chocolate chip, and chocolate with blueberry filling. I have also made a box full (literally, FULL) of small felt cookies. I make them the same way I do the big ones except I only put one piece of batting between them instead of two.
I can’t even begin to tell you all the different types of small felt cookies I have made! This picture might give a little idea of the different types.
Along with the felt cookies made today, I have also made real cookies for me to eat! Yay! I made Paleo Chocolate cookies.
Here is the recipe:
1 1/2 teaspoons of vanilla
1/4 cup of coconut sugar
1/4 cup of xyla
1/2 cup of butter
pinch teaspoon of salt
1/2 teaspoon of baking soda
1 tablespoon of gelatin
1/3 cup of tapioca flour
1/3 cup of coconut flour
1/3 cup of baking cocoa
Preheat oven to 350 degrees F. Melt the butter and add the sugars and vanilla. Mix together. Add the rest of the ingredients and mix together until smooth. Spoon dough onto two cookie sheets covered in parchment paper. I have done teaspoons and tablespoons. Bake for 8-9 minutes for teaspoon size cookies and 10-12 minutes for tablespoon size cookies.
Note: I have also made chocolate chip cookies out of the same recipe, just substituting another 1/3 cup of tapioca flour for the 1/3 cup of baking cocoa and adding about 3/4 cup of Enjoy Life mini chocolate chips. As another side note, I have left out the chocolate chips before and just made vanilla cookies (they all taste delicious!)
